What brand of brake pads would give off the least amount of dust but still be top quality for my 03 S80??

There are many dustless pads in auto stores. Try ipdusa.com the Mintex dustless for $58 a pair.
However in my humble opinion if it is dust free it is harder and heats up in hard braking your rotors. I always used Volvo pads and dust washes off easily. I rotate my tires myself at home so I get to take the wheels off and clean them inside.
My brother's SLK 320 does even more dust.

Thanks. BTW, Mintex pads are available from FCPGroton for $36/$35.

I did my 850T with Mintex Redbox and new rotors from FCP Groton for about $110 including shipping. Rears I used PBR with shims and brake grease (duh on the shims) and new pins/clips. No squeaks but the redbox do give a slight groan at times when creeping to a stop - but when I had a recent need for hard stop, I was very impressed by their bite.
