Engines on a stand in my garage. Oil pans off. I won't be able to finish it until next weekend due to school.
Is it safe to keep the bottom of the engine exposed for that long?

Just put the pan on with a few bolts to cover it.

Depends on how dirty your garage is, airflow, etc. I personally would not leave it exposed for that long.
