I eat this stuff about every month in the summers.

first eat some grilled peppers&onions to bring up them taste buds!!!

I'm lovin it medium - well done. Leave very-little pink in the middle , keeping the juicy tasteness. Awsome with just pepper & salt , if you need to A1 mixed with a hint of tobasco sauce rocks!!

rare -medium rare is the only way to have filet mignon. actually purist say medium rare is already cooked too much, but i can't eat steak rare. i'll take it medium rare preferable i'll deal with a little more towards medium. medium and more and i'm sending that sucker back for a proper one.

the reason is the fat content of the Filet is so low, that it drys out if you try to cook it up to medium. course, you can try to find marbled Filets, or wrap them in bacon. but rare to medium rare is fine with me :)

Grilling season started ages ago.

yeah, i did burgers on Saturday but it's not the same :)

o i'm well aware why, my parents owned a steak house and i spent a better part of 15 years there growing up around bbq pits, meat smokers and grills.

i can't do rare, just too raw for me. i remember one customer ordered a rare ny strip and kept sending it back saying it was over cooked, including a piece that spent 2 seconds each side that was "overcooked" we gave him a raw slab and he was all praises about it :gag:

which reminds me i should have had "raw" too :)

although i don't know how you can chew a raw strip....

Preferably warm and moving slightly. Nothing better to help work up and appetite than having to chase your steak before you eat it.

Rare but warm center.

And ya'll need to common down here to Alabama. It's always grilling season!!! Heck, this January I fired up the charcoal while it was snowing.
