Just curious. Was also thinking what if I used the RCA outs (new deck) would do the trick to hook straight into speaker system (convert existing wiring to RCA)

So you want to power the stock speakers with the RCA pre-amp output channels on your headunit? yeah that won't work. Those outputs only deliver a low-level signal for an amp. That is why there are a separate set of speaker-level outputs.

And it's fairly easy to maintain use of Dolby with an aftermarket headunit. You just need to buy a HU that has built-in Dolby 5 channel processing.
