I'm ashamed to say I don't know where the temp sending unit is located on that engine BUT on the Mustang 5.0's I had, if you lost enough coolant fast enough, the temp sender , mounted high on the enginge, lost contact with the coolant and began reading "air" temp in the cooling system. This results in low, low reads until the acutal air temps gets really hot, which means the engine could've cooked. I learned that if I had a solid low coolant light that I should not trust the engine temp reading. That sucks, I hope your engine turns out OK, from my experience, these engine are solid as long as they don't overheat.

The head/gasket is suspect at this point. Car still wouldn't start and there is coolant mixed with the oil. The stealership is going to pull the head tomorrow morning and let me know what they find.

perhaps your coolant hose is an entirely separate matter...

Ok here's an update.

You know when the dealership asks if you can come down so the tech can explain what happened that it can't be good!! Bottom line... I needs a new motor!! I'm going in tomorrow morning for the full explaination.
